This product derives from olive paste. This product contains the remaining olive oil of the olive fruit after the production of the olive oil at the olive mill, as no further extraction process has been applied. It is intended for human consumption and is used as a natural food additive. It is a novel product that is used in vegan products for its antioxidant and organoleptic properties. The product has all the characteristics (taste and odor) of extra virgin olive oil.

The method of production is by lyophilization of the olive paste (freeze at -35 ℃ and apply ultra-low vacuum).
